So this recipe was a winner the first time! I saw a similar recipe by Tara Stiles and once again had only one of the ingredients required so I just played around with it and these awesome cakey/brownie/cookie things came out.

Ingredients
2 cups almond flour
2 eggs (or 2 Tbspn egg substitute)
1/2 cup honey
1 tsp bicarb
1/2 cup of choc-almond butter/plain almond butter/organic peanut butter
1/4 cup melted coconut oil
mix everything together - it creates quite a gooey, sticky mixture so a blender might not work that well, but it did the trick for me. A proper KitchenAid or Kenwood mixer would probably be better.
Grease a baking dish with a little bit of coconut oil.
Bake at 180 for 25-35 mins depending on your oven. My oven seems to take ages but they did bake eventually! Wait for it to cool and then cut into squares/bars as desired.
Let me know what you think!
