Mexican Chicken Soup

I love love love love love this recipe. I can't type the word "love" enough times. It might be the most delicious soup ever and it is so clean and healthy, it's amost too good to be true. Almost.

I found a recipe for Mexican Chicken Soup on an American website and I had to meddle with it to make it work here, so this is the South African translation.
Ingredients
1 Tbspn Coconut Oil
1 Onion (diced)
3 cloves of garlic (finely chopped)
2 Large chilis (red or green)
2 tsp Chili powder
1 tsp Oregano
1 Tsb Ground cumin
250ml Chicken stock
3/4kg Fresh tomatoes (diced)
1 tin Sweetcorn
Salt
4 Chicken breasts (grilled & shredded)
1/2 cup Coriander
Lime wedges
In a large pot, heat the coconut oil over medium-high heat. Add the onion, garlic and chili. Cook, stirring, until the onion is translucent, about 5 minutes. Add the chili powder, oregano and cumin; cook for 1 more minute.
Add the stock, tomatoes, chiles, sweetcorn and salt. Bring to a boil, then immediately reduce heat and simmer for 20 minutes. Add the chicken; simmer for another 10 minutes then add the coriander.
Squeeze in the lime juice individually.
Go forth and enjoy!
