The Egg Muffin

There has been a lot of buzz around the egg muffun! It's in the shape of a muffin but it's savoury and it's oh so satisfying! Everyone has their favourite combination of ingredients that they put in an egg muffin and this is mine.

Remember - these are the perfect on-the-go snack. If you make 12 on a Sunday, you can keep them in the fridge until Friday. If it's Friday and you haven't eaten them all, throw the rest away.

Muffin Tin Egg Muffins

12 Eggs

1 red pepper

1 yellow pepper

1 cup of spinach

1 wheel of feta

1 pack turkey pastrami

salt

pepper

cayenne pepper

Method:

Chop all the veggies and fry off lightly in a pan (use cooking spray or coconut oil), add the turkey pastrami to the pan and cook that of as well.

Crack all 12 eggs into a bowl and whisk together, add a dash of salt, pepper, cayenne pepper and crumble in the feta. Add in all the cooked veggies and turkey.

Spray your muffin tins and spoon in the mixture. Bake at 180 for 18-20 minutes and keep an eye on them!
