Omelette Pizza

Here is a random recipe that I threw together the other evening when we didn't have much in the house and were trying to avoid ordering in. I usually turn my nose up at eggs for dinner but if it's jazzed up enough, it's really quite delicious!

I made this amount for the 2 of us, but I only ate a quarter and Josh had half - so I reckon it serves 4, but 2 of you're really hungry!

Ingredients

6 large eggs

4 skinless chicken breasts

1 red/yellow pepper (or a combo of both)

1/2 cup spinach

1/4 cup feta

1/3 cup cheddar

2 cloves garlic

2 Tsp oregano/mixed herbs/italian herbs

1/4 Tbspn coconut oil

(Turn on your grill)

Season the chicken breasts with salt, pepper and your herbs.

Heat coconut oil in a pan (medium to high heat) and add garlic. Cook the garlic off slightly before adding the chicken and when the it is sealed, add the peppers and continue cooking until the chicken is cooked through and the peppers are as soft as you'd like them.

Whisk the 6 eggs together with some salt and pepper, then pour over the chicken and peppers. Turn the heat down at let the bottom of the omelette cook for a minute or 2. Place pan under the grill until the top of the omelette looks firm. Take it out the oven and scatter the spinach over the top, and then sprinkle the feta and cheddar cheese over the spinach.

Place under the grill under cheese is melted to your taste!
